Raita is a condiment used in Indian cooking. It is an excellent complement to spicy or hotter food because the yogurt base tends to serve as a coolant when eaten alongside hotter food. Let me know if you have any questions.

1 cucumber, peeled and seeded
1 16-ounce plain yogurt
1 teaspoon fresh lime juice
¼ teaspoon yellow mustard
Salt and black pepper to taste
Chopped mint or coriander leaves

1) Using the large hole of a box grater, grate cucumber and squeeze out all the liquid from grated cucumber.
2) In a medium-size mixing bowl, combine grated cucumber with yogurt. Add rest of the ingredients except freshly chopped mint or coriander leaves. Taste and adjust seasonings.
3) Cover and refrigerate until ready to serve. Just before serving garnish with mint if needed.

Yield: approximately 2 ½ cups.
