Fried Rice

Fried rice is basically made from leftover rice along with a variety of vegetables (cauliflower, green peas, carrots, zucchini, broccoli, mushrooms, sliced chestnut, green beans, peppers and scallions etc.), nuts, spices and seasonings of choice. The easiest way to make this dish is simply use the ingredients you have on hand. The best part is that it can be prepared under 30 minutes as long as there is leftover rice on hand along with needed vegetables or cooked meat for non-vegetarians.

Fried Rice
1/2 tablespoon vegetable oil
1/2 tablespoon unsalted butter
1 two-inch-piece ginger, peeled and thinly sliced
1 cup red bell pepper, cut into small pieces
1 cup green bell pepper, cut into small pieces
2 cloves garlic, peeled and thinly sliced
1/2 teaspoon salt
1 tablespoon Biryani Pulav Masala
2 cups cooked rice
1 cup cubed spiced tofu

1) Heat oil and butter in a large skillet over medium high heat. Add ginger, peppers and garlic; cook until tender stirring often. Add salt and Biryani Pulav Masala (or your favorite spice mix).
2) Mix well and stir in the remaining ingredients. Heat through.

Yield: 4-6 servings.
